I made some Jerk Pork and Rice the other night but it just seemed to be missing something, so I put it on corn tortillas with a little cilantro and it was perfect!

I love the taste of apples paired with pork but I thought I would try roasting the pork with apple butter instead of whole apples for a better texture. The end result was a great loin and a great apple sauce!
This is a very easy recipe for Sausage Jambalaya to throw together on a weeknight and especially good on top of some sweet cornbread!
