I love sweet potatoes and so I’m always looking for a way to copy restaurant sweet potatoes. You know there ones where the skin is separated and you have a creamy but not mushy sweet potato inside. This recipe pretty much hit the nail on the head!

2-4 sweet potatoes
pinch of salt
Preheat the oven to 450°F and set the rack to the bottom ⅓ of the oven.
Place the sweet potatoes on a foil lined baking sheet and bake for 20 minutes.
After 20 minutes, reduce heat to 350°F and bake for an additional 60 minutes.
Let cool for about 10 minutes and serve!
For an extra special treat, once you slice the potato open, pour a little caramel sauce over it and top with marshmallows. Broil for about 2 minutes.
