I was peeling pumpkins this morning for pumpkin puree and suddenly I had one of those lightening bolt moments and remembered a Pumpkin Pancakes recipe I saw in one of Grammy’s cookbooks! What can I say, these are the best! What better way to celebrate Autumn and the cooler weather!

Ingredients
  • 1 cup buttermilk
  • 1 cup pumpkin puree
  • 2 eggs
  • 2 tbsp vegetable oil
  • 2 cups all-purpose flour
  • 3 tbsp brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • ½ tsp salt

Instructions
  1. In a bowl, mix together buttermilk, pumpkin, egg and oil. Combine flour, brown sugar, baking powder, baking soda, pumpkin pie spice and salt in a separate bowl.
  2. Add flour mixture to pumpkin mixture; stir just enough to combine.
  3. Heat a lightly oiled griddle over medium-heat heat. Pour or scoop batter onto griddle, or use an ice cream scoop.
  4. Brown on both sides and serve hot.

Notes
If you don’t have pumpkin pie spice you can use 1 tsp ground allspice, 1 tsp ground cinnamon and ½ tsp ground ginger.
