I was peeling pumpkins this morning for pumpkin puree and suddenly I had one of those lightening bolt moments and remembered a Pumpkin Pancakes recipe I saw in one of Grammy’s cookbooks! What can I say, these are the best! What better way to celebrate Autumn and the cooler weather!

Ingredients
- 1 cup buttermilk
- 1 cup pumpkin puree
- 2 eggs
- 2 tbsp vegetable oil
- 2 cups all-purpose flour
- 3 tbsp brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- ½ tsp salt
Instructions
- In a bowl, mix together buttermilk, pumpkin, egg and oil. Combine flour, brown sugar, baking powder, baking soda, pumpkin pie spice and salt in a separate bowl.
- Add flour mixture to pumpkin mixture; stir just enough to combine.
- Heat a lightly oiled griddle over medium-heat heat. Pour or scoop batter onto griddle, or use an ice cream scoop.
- Brown on both sides and serve hot.
Notes
If you don’t have pumpkin pie spice you can use 1 tsp ground allspice, 1 tsp ground cinnamon and ½ tsp ground ginger.
