Well the zucchini is stacking up and one quick way to get some out of the kitchen and into your friends hands is with some good ole' zucchini bread.
  • 2 cups sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 1 tsp vanilla extract
  • 3 cups sifted flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 2 cups grated zucchini
  • 1 cup chopped pecans
  1. Preheat oven to 350 degrees.
  2. In a large bowl combine sugar, eggs, oil and vanilla.
  3. In a medium bowl sift and combine dry ingredients and add to wet ingredients.
  4. Fold in zucchini and pecans.
  5. Pour into 2 greased loaf pans and bake for 1 hour.
  6. Cool for 5 minutes in pans before turning out on wire racks to cool completely.
